The edible portion is the white curd-like mass of a close aggregation of abortive flowers on thick branches produced at the top of a short stem. No part of the inflorescence is apparent in a curd. During development, the large green leaves cover to exclude light and that results in the brilliant whiteness of the curd.
Uses
It is eaten cooked as a vegetable, boiled and eaten with sauces or pickled.
