It is similar to cauliflower but terminal and axillary greens heads of unopened buds are produced. It is not so compact as the cauliflower and is harvested just before the flowers open. It is a hardier form of cauliflower and withstands not only a mild winter but also a drier and hotter climate.
Uses
The entire inflorescence with the stalks is consumed.
